Challah Schnitzel Sandwich

I seriously don't remember the last time I had such an incredible sandwich. In the past few years, challah schnitzel sandwich became the new addiction in Israel. There are many versions to this divine sandwich, but the key ingredients are mini challah, matbuha (hot tomato sauce), fried eggplants, and freshly fried schnitzel (usually more than one). I added super thin slices of my grandpa's pickles and tahini on top. The challah, by the way, is braided from one strand only, then brushed and topped with sesame seeds. For the schnitzel and the eggplants- I usually don't fry at home, it's getting always messy and it's a pain in the ass to clean. But this sandwich is 10000% worth it! YASSS.

It is the Greatest Salad of All Time (GSOAT). And while technically you are going to have to make a mayonnaise from scratch in preparing this dressing, it’s actually super-duper easy and not as prone to failure as you might think. Trust.

Classic English Muffins

These English muffins are surprisingly fun to make, surprisingly cooked entirely on the stovetop rather than baked, and surprisingly similar looking to the packaged kind while tasting a million times better. One of the keys is an old-fashioned step called “scalding” the milk, meaning bringing it to a temperature just under boiling. This denatures the whey proteins in the milk, which helps improve the gluten network and increases moisture retention in the dough (both important if you want to achieve the telltale nooks and crannies of an English muffin). This recipe requires an overnight rest in the refrigerator, which is helpful if you want them fresh for breakfast the next morning, and makes the very wet and sticky dough easier to handle. I like to punch out clean rounds with a cutter, so all the muffins are uniform, but if you don’t have a cutter or don’t want to discard any dough scraps, see the note about forming in the recipe. It’s helpful to have a griddle for cooking all the English muffins simultaneously, but it’s also very doable in batches in a cast-iron skillet.

Chewy Lemon Cookies

The recipe uses Sarah Kieffer’s pan-banging technique, which requires quite a specific dough-ball size and wide spacing on the sheet pan to work. Make sure each round of dough is 3 ounces, and don’t bake more than four balls on one pan. These giant cookies are even better when they’ve cooled slightly — they become chewier and the rosemary emerges.

For all the impact of a complex, long simmered curry in a cinch, bring on the Japanese curry roux blocks! Unlike curry powder, these curry blocks only need to be simmered in water to add loads of flavor and body. Traditionally carrots, potatoes and onions are included, but this version smothers ginger-spiked chicken meatballs, creamy sweet potato and lots of greens in the sauce. This dish tastes even better the next day as all the flavors mellow and meld, so it’s perfect for meal prep.

This baked ziti is layered almost like a lasagna to ensure every bite has enough creamy ricotta, stringy mozzarella and tangy tomato sauce. But the key to its success comes from undercooking the pasta during the initial boil so it stays perfectly al dente, even after a trip to the oven. Heavy cream is added to prevent the ricotta from becoming grainy or dry during baking, letting it be its most luscious self. While this baked ziti is meatless (there’s plenty of richness from the cheese — three types, to be exact), you could always incorporate a bit of sausage, ground meat or pancetta, if you like. Simply add 1/2 pound to the onions while sautéeing and proceed with the recipe.
